- In a shallow bowl, whisk the eggs. In another bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper. Mix well to create your coating mixture.
- Dip each zucchini stick first into the egg mixture, letting excess drip off, then into the breadcrumb mixture, pressing gently to ensure even coating.
- Lightly spray or brush the air fryer basket with olive oil. Arrange the coated zucchini fries in a single layer without overcrowding. You may need to cook in batches.
