  3. In a shallow bowl, whisk the eggs. In another bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper. Mix well to create your coating mixture.
  4. Dip each zucchini stick first into the egg mixture, letting excess drip off, then into the breadcrumb mixture, pressing gently to ensure even coating.
  5. Lightly spray or brush the air fryer basket with olive oil. Arrange the coated zucchini fries in a single layer without overcrowding. You may need to cook in batches.
