- Wash and trim the green beans, removing the stem ends. Pat them dry thoroughly - this helps them get beautifully crisp when cooking.
- Heat sesame oil in a large skillet or wok over medium-high heat. Add the green beans and stir-fry for 5-6 minutes, until they're bright green and slightly tender but still crisp.
- Add minced garlic (if using) and stir-fry for 30 seconds until fragrant. Be careful not to burn the garlic.
- Pour in the soy sauce and honey, tossing constantly to coat all the beans. Continue cooking for 1-2 minutes until the sauce thickens slightly and glazes the beans.
- Remove from heat and sprinkle with toasted sesame seeds. Toss one final time and serve immediately while hot and crunchy.
Notes
Choose fresh beans without brown spots, don't overcook to maintain crisp-tender texture, and toast sesame seeds for maximum flavor.
