- Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
- Mix dry ingredients: In a large bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt. Set aside.
- Combine wet ingredients: In the same bowl, add the sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined and smooth.
- Add zucchini: Gently fold in the grated zucchini and nuts (if using) until just combined. Be careful not to overmix.
- Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Don’t overmix: Overmixing the batter can result in a dense loaf. Stir just until the ingredients are combined. Use fresh zucchini: Freshly grated zucchini works best. If it’s too watery, squeeze out excess moisture with a clean towel. Add-ins: Customize your bread with chocolate chips, raisins, or dried cranberries for extra flavor. Storage: Store the bread in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
