  • 2 large eggs

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped nuts (walnuts or pecans, optional)

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set it aside.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, beat the melted butter, granulated sugar, and brown sugar until smooth and creamy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  6. Gently fold in the grated zucchini until evenly distributed. If using, fold in the chocolate chips and nuts.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
