- Brush the edges of the puff pastry with the beaten egg to create a golden, flaky crust.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the cheese is bubbly.
- Allow the tarts to cool slightly before serving. Garnish with fresh basil leaves if desired.

For the best flavor, use ripe and colorful heirloom tomatoes. To avoid a soggy crust, pat the tomato slices dry with a paper towel before placing them on the pastry.
