  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface to smooth out any creases. Transfer it to the prepared baking sheet.
  3. In a small bowl, mix the ricotta cheese, chopped basil, minced garlic, olive oil, salt, and pepper until well combined.
  4. Spread the herbed ricotta evenly over the puff pastry, leaving a small border around the edges. Arrange the halved cherry tomatoes on top of the ricotta, pressing them lightly into the cheese.
  5. Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and crisp.
  6. Remove the tart from the oven and let it cool slightly. Drizzle with balsamic glaze if desired, and garnish with additional fresh basil. Slice and serve warm.

Notes
