- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface to smooth out any creases. Transfer it to the prepared baking sheet.
- In a small bowl, mix the ricotta cheese, chopped basil, minced garlic, olive oil, salt, and pepper until well combined.
- Spread the herbed ricotta evenly over the puff pastry, leaving a small border around the edges. Arrange the halved cherry tomatoes on top of the ricotta, pressing them lightly into the cheese.
- Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and crisp.
- Remove the tart from the oven and let it cool slightly. Drizzle with balsamic glaze if desired, and garnish with additional fresh basil. Slice and serve warm.
Notes
Use high-quality ingredients for the best flavor. Customize the herbs with thyme or oregano. The herbed ricotta can be prepared a day ahead. Add toasted pine nuts or sliced almonds for extra crunch.
