Instructions
- In a bowl, combine the diced tomatoes, chopped basil, minced garlic, extra-virgin olive oil, balsamic vinegar, salt, and pepper. Stir gently to mix all the ingredients. Let the mixture sit for about 10 minutes to allow the flavors to meld together.
- Preheat your oven to 375°F (190°C). Place the baguette slices on a baking sheet and toast them in the oven for about 5-7 minutes, or until they are golden and crisp. Alternatively, you can toast the bread slices in a toaster or on a grill.
- Once the bread slices are toasted, remove them from the oven and immediately rub the cut side of the garlic cloves over the surface of each slice. This step infuses the bread with a subtle garlic flavor.
- Spoon the tomato mixture generously onto each garlic-rubbed bread slice. Drizzle a little extra olive oil on top if desired. Serve immediately while the bread is still crisp.
Notes
Choose ripe tomatoes for the best flavor. Allowing the tomato mixture to sit for a few minutes enhances the flavors. Toast the bread until crisp to prevent sogginess. For a variation, sprinkle grated Parmesan or crumbled feta cheese on top.
