- In a bowl, mix the softened cream cheese, chopped dill, lemon juice, salt, and pepper until smooth and well combined.
- Lay out the slices of bread on a clean surface. If desired, lightly butter one side of each slice to add extra flavor and prevent sogginess.
- Spread a generous layer of the herbed cream cheese mixture onto the unbuttered side of each bread slice.
- Place thinly sliced cucumber evenly over the cream cheese on half of the bread slices. Top with the remaining bread slices, cream cheese side down.
- Trim the crusts off the sandwiches for a more elegant look, if desired. Cut each sandwich into quarters or halves to create tea sandwiches or bite-sized pieces. Serve immediately or chill for 30 minutes to let the flavors meld.
Notes
Choose fresh, soft bread for the best texture. Pat the cucumber slices dry with a paper towel before placing them on the cream cheese to prevent sogginess. For extra flavor, add garlic powder or hot sauce to the cream cheese mixture. These sandwiches can be made up to 2 hours ahead and stored in an airtight container in the refrigerator.
