Instructions
- Preheat the oven to 325°F (165°C). Grease and flour two 8x4-inch loaf pans.
- In a large bowl, combine the flour, salt, baking soda, baking powder, and cinnamon. Stir well to ensure even distribution.
- In another bowl, beat the eggs until light and frothy. Add the vegetable oil, sugar, and vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
- Fold in the grated zucchini and chopped nuts (if using). The batter will be thick but moist.
- Pour the batter evenly into the prepared loaf pans. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use fresh zucchini for the best flavor and texture. Avoid overmixing the batter to prevent a dense loaf. Customize with add-ins like raisins or chocolate chips if desired. Store in an airtight container for up to 3 days or freeze for longer storage.
