- Preheat your oven to 375°F (190°C). In a large bowl, combine the sliced peaches, 1/2 cup of sugar, and ground cinnamon. Toss gently to coat the peaches evenly. Set aside while you prepare the batter.
- In a separate bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt. Melt the butter and pour it into a 9x13-inch baking dish. Spread the melted butter evenly across the bottom of the dish.
- Pour the milk and vanilla extract into the dry ingredients. Stir until just combined—be careful not to overmix. The batter will be slightly lumpy.
- Pour the batter over the melted butter in the baking dish. Do not stir. Spoon the peach mixture evenly over the batter. Again, do not stir.
- Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the crust is golden brown and the peaches are bubbly. Allow the cobbler to cool for a few minutes before serving.
Notes
Use fresh peaches for the best flavor. Adjust sugar based on peach sweetness. Serve warm with vanilla ice cream or whipped cream. Store leftovers in the refrigerator for up to 3 days.
