  • 1/2 red onion, finely diced
  • 1/4 cup fresh cilantro, chopped

  • 2 tablespoons olive oil
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Optional: 1/2 cup black beans, rinsed and drained
  • Optional: 1 jalapeño, seeded and minced

  1. Prepare the vegetables by dicing the avocados, halving the cherry tomatoes, and finely dicing the red onion. If using fresh corn, remove the kernels from the cob. For frozen corn, ensure it's completely thawed.
  2. In a large mixing bowl, combine the diced avocados, corn kernels, cherry tomatoes, red onion, and fresh cilantro. If adding black beans or jalapeño, include them at this stage.
  3. In a small bowl, whisk together the fresh lime juice, olive oil, honey or maple syrup, cumin, salt, and pepper. The dressing should be well combined and slightly emulsified.
  4. Pour the dressing over the avocado and corn mixture. Gently toss everything together until well coated. Be careful not to overmix, as you want to maintain the texture of the avocados.
  5. Taste and adjust seasoning if needed. You might want to add more lime juice for acidity or salt to enhance the flavors. Serve immediately or chill for 30 minutes to allow the flavors to meld together.

Notes

Choose avocados that are ripe but still firm. Prepare dressing and chop vegetables ahead of time, but combine just before serving to prevent avocados from browning. For best flavor, use fresh corn when in season or grill corn first for smoky flavor.
