- Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
- While pasta cooks, melt butter in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir in Italian seasoning, onion powder, salt, and pepper.
- Reduce heat to low and gradually whisk in Parmesan cheese until smooth and creamy.
- Add shredded rotisserie chicken and cooked pasta to the sauce. Toss to coat evenly, adding reserved pasta water as needed to reach desired consistency.
- Sprinkle mozzarella cheese over the top and cover for 2 minutes to melt. Garnish with fresh parsley and serve immediately.
Notes
Use the starchy pasta water to help the sauce cling beautifully to the pasta. Shred the chicken while still warm for easiest preparation. Add red pepper flakes or fresh basil for extra flavor.
