Ingredients

Ingredients
  • 2 medium cucumbers, thinly sliced
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh mint leaves, chopped
  • 2 tablespoons fresh basil leaves, chopped
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • Salt and black pepper to taste

Method

Instructions
  1. Prepare the vegetables and fruits. Wash and dry the cucumbers and strawberries thoroughly. Thinly slice the cucumbers using a mandoline or sharp knife. Hull the strawberries and slice them into uniform pieces.
  2. Combine the base ingredients. In a large mixing bowl, combine the sliced cucumbers, strawberries, and red onion. Gently toss to mix without crushing the delicate strawberries.
  3. Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper until well combined. The honey should dissolve completely into the mixture.
  4. Dress the salad. Pour the dressing over the cucumber and strawberry mixture and toss gently to coat all ingredients evenly. Be careful not to overmix as the strawberries can become mushy.
  5. Add fresh herbs and cheese. Sprinkle the chopped mint, basil, and crumbled feta cheese (if using) over the salad. Give it one final gentle toss to distribute the herbs throughout.
  6. Chill and serve. For best flavor, let the salad chill in the refrigerator for 10-15 minutes before serving. This allows the flavors to meld together beautifully.

Notes

Choose ripe but firm strawberries, slice cucumbers thinly, don't skip the chilling time for better flavor development, and customize with toasted nuts for added crunch.
