  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/2 cup sour cream or Greek yogurt
  • Salt and pepper to taste
  • Fresh cilantro for garnish

  1. Cut chicken into bite-sized pieces and season with salt and pepper. In a large pot, heat olive oil over medium-high heat and brown the chicken until cooked through, about 6-8 minutes. Remove chicken and set aside.
  2. In the same pot, add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Return the cooked chicken to the pot. Add white beans, diced green chilies, chicken broth, cumin, oregano, and chili powder. Stir well to combine.
  4. Bring the mixture to a boil, then reduce heat to low and simmer for 20-25 minutes, allowing flavors to meld together.
  5. Stir in sour cream or Greek yogurt until well incorporated. Taste and adjust seasoning as needed. Serve hot with your favorite toppings.

Notes

For even more flavor, try shredding the chicken instead of cubing it. For an even creamier consistency, blend one can of beans before adding to the pot. This creates a natural thickener without adding flour.
