Ingredients

Ingredients
  • 4 cups cubed seedless watermelon (about 1 small watermelon)
  • 3 ripe peaches, pitted and sliced
  • ΒΌ cup fresh mint leaves, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or maple syrup (optional)
  • Pinch of sea salt

Method

Instructions
  1. Prepare the fruits by cutting the watermelon into 1-inch cubes and slicing the peaches into thin wedges. Remove any pits from the peaches.
  2. In a large mixing bowl, gently combine the watermelon cubes and peach slices. Be careful not to crush the delicate fruit.
  3. Add the chopped mint leaves to the fruit mixture. The mint adds a refreshing herbal note that complements the sweetness perfectly.
  4. Drizzle the lime juice over the salad. If you prefer a sweeter salad, add the honey or maple syrup at this stage.
  5. Sprinkle with a pinch of sea salt to enhance the natural flavors. Gently toss everything together until well combined.
  6. Let the salad rest for 5-10 minutes to allow the flavors to meld together. Serve chilled or at room temperature.

Notes

For best results, choose ripe but firm peaches that will hold their shape when mixed. If making ahead, prepare fruits separately and combine just before serving to prevent watermelon from becoming watery. Pairs well with grilled dishes.
