Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry sheet on a lightly floured surface. Transfer it to the prepared baking sheet and prick the center with a fork, leaving a 1-inch border around the edges.
- In a small bowl, mix the ricotta cheese, olive oil, minced garlic, thyme, rosemary, salt, and pepper until well combined.
- Spread the ricotta mixture evenly over the puff pastry, staying within the border. Arrange the tomato slices on top of the ricotta, slightly overlapping them. Sprinkle the grated Parmesan cheese over the tomatoes.
- Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and crispy, and the tomatoes are slightly softened.
- Remove the tart from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before slicing and serving.
Notes
Use high-quality ingredients for the best flavor. Customize with other herbs like oregano or parsley. The tart can be served warm or at room temperature, making it perfect for picnics or potlucks.
