  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface. Transfer it to the prepared baking sheet.
  3. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the pastry, leaving a 1-inch border around the edges. Arrange the sliced tomatoes on top of the cheese. Drizzle with olive oil and sprinkle with thyme, basil, salt, and pepper.
  4. Gently fold the edges of the pastry inward to create a rustic border. Brush the folded edges with the beaten egg for a golden finish.
  5. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the cheese is bubbly.
  6. Allow the tart to cool slightly before slicing. Serve warm or at room temperature.
