  • 2 large tomatoes, thinly sliced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Roll out the thawed puff pastry sheet on a lightly floured surface. Use a sharp knife to score a border about 1/2 inch from the edge of the pastry.
  3. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the pastry, staying within the scored border.
  4. Place the thinly sliced tomatoes on top of the cheese, overlapping slightly. Drizzle with olive oil and sprinkle with dried oregano, basil, salt, and pepper.
  5. Transfer the baking sheet to the preheated oven and bake for 20-25 minutes, or until the pastry is golden brown and crispy.
  6. Remove the tart from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before slicing and serving.

Notes

Use room temperature puff pastry for easy handling. Drain tomato slices to prevent a soggy crust. Customize with additional vegetables like zucchini or bell peppers. Serve warm or at room temperature.
