- Cook the pasta according to package directions in salted water until al dente. Reserve 1/2 cup of pasta water before draining.
- While pasta cooks, combine halved cherry tomatoes, minced garlic, chopped basil, olive oil, and balsamic vinegar in a large bowl. Season with salt and pepper.
- Let the tomato mixture sit for 10-15 minutes to allow flavors to meld together.
- Add the drained pasta to the tomato mixture along with a splash of reserved pasta water. Toss everything together until well combined.
- Stir in grated Parmesan cheese and additional basil for garnish. Add red pepper flakes if desired.
Notes
For best results, use ripe, juicy cherry tomatoes and choose a good quality extra virgin olive oil. The flavors improve as they meld together, making great leftovers. Basil can be stored with stems in water on the countertop like fresh flowers.
