  • 4 cups cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

  1. Cook the pasta according to package directions in salted water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While pasta cooks, combine halved cherry tomatoes, minced garlic, chopped basil, olive oil, and balsamic vinegar in a large bowl. Season with salt and pepper.
  3. Let the tomato mixture sit for 10-15 minutes to allow flavors to meld together.
  4. Add the drained pasta to the tomato mixture along with a splash of reserved pasta water. Toss everything together until well combined.
  5. Stir in grated Parmesan cheese and additional basil for garnish. Add red pepper flakes if desired.

Notes

For best results, use ripe, juicy cherry tomatoes and choose a good quality extra virgin olive oil. The flavors improve as they meld together, making great leftovers. Basil can be stored with stems in water on the countertop like fresh flowers.
