  • 8 oz burrata cheese
  • 4 cups arugula or mixed greens
  • 1/4 cup fresh basil leaves
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt and freshly ground black pepper to taste
  • Optional: toasted pine nuts or sliced almonds for crunch

  1. Grill the Peaches: Preheat your grill or grill pan to medium-high heat. Brush the peach halves with a little olive oil and grill for 2-3 minutes per side until slightly charred and tender. Remove from heat and let cool slightly.
  2. Prepare the Balsamic Glaze: In a small bowl, whisk together the balsamic vinegar, honey, and a pinch of salt. Set aside.
  3. Assemble the Salad: Arrange the arugula or mixed greens on a large platter or individual plates. Place the grilled peach halves on top of the greens.
  4. Add the Burrata: Tear the burrata cheese into large pieces and place it over the peaches and greens. Drizzle the balsamic glaze over the salad.
  5. Garnish and Serve: Scatter fresh basil leaves on top and sprinkle with toasted pine nuts or almonds if using. Season with salt and freshly ground black pepper to taste. Serve immediately and enjoy!

Notes

Choose ripe but firm peaches for grilling. You can use a grill pan or broil the peaches in the oven if a grill is unavailable. Assemble the salad just before serving to keep the greens fresh. Customize with other summer fruits like plums or nectarines.
