- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or cooking spray.
- Season the chicken breasts with salt, pepper, dried oregano, and dried basil. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sear the chicken for 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.
- In the same skillet, add the remaining olive oil. Sauté the diced onion and minced garlic until fragrant, about 2 minutes. Add the sliced zucchini and cook for another 3-4 minutes until slightly softened.
- Place the seared chicken breasts in the prepared baking dish. Arrange the sautéed zucchini, onion, and garlic around the chicken. Pour the vegetable broth over the chicken and vegetables.
- Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top of the chicken and vegetables.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden brown.
- Let the dish rest for a few minutes before serving. Garnish with fresh herbs if desired, and enjoy your Garlic Chicken Zucchini Bake!
Notes
Customize your cheese blend for a unique flavor. Add more veggies like bell peppers or spinach for extra nutrition. You can prepare this dish ahead of time and refrigerate it until ready to bake. Chicken thighs can be used instead of chicken breasts if preferred.
