  • 4 ripe peaches, halved and pitted
  • 4 cups arugula
  • 1 ball burrata cheese
  • 1/4 cup fresh basil leaves
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

  1. Preheat your grill to medium-high heat. Brush the peach halves with olive oil and place them on the grill, cut side down. Grill for 2-3 minutes until char marks appear and the peaches are slightly softened. Remove from the grill and set aside.
  2. In a small saucepan, combine the balsamic vinegar and honey. Simmer over low heat for 5-7 minutes until the mixture thickens slightly. Remove from heat and let it cool.
  3. In a large bowl, toss the arugula with a drizzle of olive oil, salt, and pepper. Arrange the arugula on a serving platter. Place the grilled peach halves on top of the arugula. Tear the burrata cheese into pieces and scatter it over the peaches. Drizzle the balsamic glaze over the salad and garnish with fresh basil leaves.

Notes

Choose ripe but firm peaches for grilling. Overly soft peaches may fall apart on the grill. For a vegan option, substitute the burrata with a plant-based cheese or avocado slices. Add a handful of toasted nuts, such as almonds or pecans, for extra crunch. If you don't have a grill, you can use a grill pan or broil the peaches in the oven for a similar effect.
