  1. Preheat your oven to 375°F (190°C). Roll out the puff pastry sheet on a lightly floured surface and transfer it to a parchment-lined baking sheet. Use a fork to prick the pastry all over, then bake for 10 minutes until lightly golden. Remove from the oven and let it cool slightly.
  2. In a bowl, mix the ricotta cheese, grated Parmesan, egg, salt, and pepper until smooth. Spread this mixture evenly over the pre-baked puff pastry, leaving a small border around the edges.
  3. Arrange the sliced heirloom tomatoes on top of the ricotta mixture, overlapping slightly. Drizzle with olive oil and sprinkle with minced garlic. Bake for 20-25 minutes, or until the crust is golden and the tomatoes are tender.
  4. Once out of the oven, garnish the tart with fresh basil leaves. Let it cool for a few minutes before slicing and serving.

Notes
