- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- Pat the chicken drumsticks dry with paper towels. This step is crucial for achieving crispy skin. Place them in a large bowl and drizzle with olive oil, tossing to coat evenly.
- In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper if using. Sprinkle this spice rub over the chicken and massage it into every surface.
- Arrange the seasoned drumsticks on the prepared baking sheet, making sure they're not touching. This allows for even air circulation and better browning.
- Bake for 25 minutes. Meanwhile, whisk together the barbecue sauce, apple cider vinegar, and honey in a small bowl.
