- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced peaches with 1/2 cup of sugar and cinnamon. Mix well and set aside.
- Place the butter in a 9x13-inch baking dish and melt it in the preheated oven. Once melted, remove the dish from the oven.
- In a separate bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Stir in the milk and vanilla extract until the batter is smooth.
- Pour the batter over the melted butter in the baking dish. Do not stir. Spoon the peach mixture evenly over the batter.
- Bake for 40-45 minutes, or until the crust is golden brown and the peaches are bubbly.
- Let the cobbler cool slightly before serving. Enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
Use fresh, ripe peaches for the best flavor. For a lighter version, substitute butter with a plant-based alternative. Enhance the flavor by adding a pinch of nutmeg or allspice to the peach mixture. Store leftovers in the refrigerator for up to 3 days.
