- In a large bowl, toss the cubed beef with flour, salt, pepper, garlic powder, and onion powder until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add the beef and sear until browned on all sides. Remove the beef from the skillet and set aside.
- In the same skillet, add the diced onion, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in the beef broth, grape juice, tomato paste, thyme, and rosemary. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Return the beef to the skillet and add the frozen peas. Simmer for another 15-20 minutes, or until the beef is tender and the gravy has thickened.
- Preheat your oven to 375°F (190°C). Transfer the beef and gravy mixture to a pie dish. Roll out the puff pastry and place it over the top of the dish. Trim any excess pastry and crimp the edges to seal. Brush the top with the beaten egg for a golden finish.
- Bake for 25-30 minutes, or until the crust is golden brown and flaky. Let it cool for a few minutes before serving.
Notes
Use cold puff pastry for a flakier crust. Customize vegetables like mushrooms or potatoes for added flavor. The filling can be prepared a day in advance.
