- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 2-3 minutes with a hand mixer or stand mixer.
- Beat in the egg and vanilla extract until well combined. The mixture should be smooth and creamy.
- In a separate small bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
- Stir in the oats and any optional add-ins like raisins or chocolate chips. The dough will be thick but should come together easily.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. You can gently flatten each cookie slightly with the back of a spoon.
- Bake for 10-12 minutes, or until the edges are golden brown but the centers still look slightly soft. The cookies will continue to set as they cool.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Don't overmix once flour is added. Use room temperature ingredients for best texture. For chewier cookies, bake for minimum time. Cookies freeze beautifully for up to 3 months.
