  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup grape juice (as a substitute for wine)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

  1. In a large bowl, toss the cubed beef with flour, salt, and pepper until evenly coated.
  2. Heat olive oil in a large pot over medium-high heat. Add the beef and sear until browned on all sides. Remove the beef from the pot and set it aside.
  3. In the same pot, add the diced onion, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.
  4. Pour in the beef broth and grape juice, scraping the bottom of the pot to release any browned bits. Stir in the tomato paste, thyme, and rosemary. Return the beef to the pot and bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for 1.5 to 2 hours, or until the beef is tender.
  5. Stir in the frozen peas and corn, and cook for an additional 5 minutes. Remove the pot from heat and let the filling cool slightly.
  6. Preheat your oven to 375°F (190°C). Transfer the beef filling to a large baking dish or individual ramekins. Roll out the puff pastry and place it over the filling, trimming any excess. Brush the pastry with the beaten egg for a golden finish.
  7. Bake for 25-30 minutes, or until the pastry is golden brown and flaky. Let the pot pie cool for a few minutes before serving.
