  • 2 cups cooked chicken breast, shredded (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • 1 cup ranch dressing
  • ¾ cup buffalo sauce (like Frank's RedHot)
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ cup blue cheese crumbles (optional)
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • Tortilla chips, celery sticks, or bread for serving

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish or similar oven-safe serving dish.
  2. In a large mixing bowl, combine the softened cream cheese, ranch dressing, and buffalo sauce. Use an electric mixer or whisk until smooth and well combined.
  3. Stir in the shredded chicken, ¾ cup of the cheddar cheese, Monterey Jack cheese, minced garlic, and half of the sliced green onions. If using blue cheese, add it now as well.
  4. Spread the mixture evenly into your prepared baking dish. Sprinkle the remaining ¼ cup cheddar cheese over the top.
  5. Bake for 20-25 minutes, or until the dip is hot and bubbly and the cheese on top is melted and lightly golden.
  6. Remove from oven and sprinkle with remaining green onions. Serve immediately with your choice of dippers.

Notes

Use room temperature cream cheese for easier mixing. Rotisserie chicken saves time. Adjust spice level by using mild, medium, or hot buffalo sauce. Can be assembled up to 24 hours in advance and refrigerated before baking.
