  1. Prepare the Garlic Butter Sauce: In a small bowl, combine the melted butter, minced garlic, Italian seasoning, paprika, onion powder, black pepper, and salt. Whisk until well combined.
  2. Layer the Ingredients: Place the potato chunks and carrot pieces in the bottom of your 6-quart slow cooker. Arrange the chicken thighs evenly over the vegetables. Pour the garlic butter sauce over everything, making sure each piece gets coated.
  3. Add Liquid and Cook: Pour the chicken broth around the edges of the crock pot (not directly over the chicken to avoid washing off the seasoning). Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  4. Final Touches: Once cooked, use tongs to remove the chicken and vegetables to a serving platter. Spoon some of the delicious cooking liquid over the top and garnish with fresh parsley.
