- In a large mixing bowl, combine the ground turkey, chopped onion, minced garlic, beaten egg, breadcrumbs, Worcestershire sauce, Dijon mustard, smoked paprika, oregano, black pepper, and sea salt. Mix gently with your hands until just combined - avoid overmixing to keep the patties tender.
- Divide the mixture into 4 equal portions and shape each into a patty about 3/4-inch thick. Press your thumb gently into the center of each patty to create a slight indentation - this helps the burgers cook evenly and prevents them from puffing up.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the turkey patties and cook for 5-6 minutes on the first side until golden brown and crisp.
- Flip the burgers and cook for another 4-5 minutes on the second side, or until the internal temperature reaches 165°F. The crust should be beautifully golden and crisp while the interior remains juicy.
- Toast the burger buns lightly if desired, then assemble your burgers with lettuce, tomato, and any other favorite toppings. Serve immediately while hot and crisp.
Notes
Don't overmix the turkey mixture, keep ingredients cold, chill formed patties for 15-20 minutes before cooking, use meat thermometer to ensure 165°F internal temperature, let cooked patties rest for 2-3 minutes before assembling.
