  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Use a wooden spoon or spatula to mix until well combined and creamy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Add the flour, baking soda, salt, and cinnamon directly into the same bowl. Mix until just combined - don't overmix.
  5. Fold in the oats and any optional add-ins like raisins or chocolate chips until evenly distributed.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until edges are golden brown and centers are set. Let cool on baking sheets for 5 minutes before transferring to wire racks.

Notes

For the chewiest cookies, slightly underbake them - they'll continue to set as they cool on the baking sheet. These cookies freeze beautifully - place cooled cookies in an airtight container with parchment between layers.
