- Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish or similar oven-safe dish.
- In a large mixing bowl, combine the softened cream cheese, buffalo sauce, ranch dressing, garlic powder, and onion powder. Mix until smooth and well combined.
- Add the shredded chicken to the cream cheese mixture and stir until the chicken is evenly coated.
- Fold in 3/4 cup of the cheddar cheese and all the mozzarella cheese, reserving some cheddar for topping. If using blue cheese, add it now.
- Transfer the mixture to your prepared baking dish and spread evenly. Top with the remaining 1/4 cup cheddar cheese.
- Bake for 20-25 minutes, or until the dip is hot and bubbly with a golden-brown cheese crust.
- Remove from oven and let rest for 5 minutes before garnishing with sliced green onions.
Notes
Use rotisserie chicken for convenience; adjust buffalo sauce for preferred spice level; can be made ahead and refrigerated before baking; serves well with tortilla chips, celery sticks, or sliced baguette.
