  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 3 garlic cloves, minced
  • 2 cups vegetable broth
  • 1 cup grape juice
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 cup frozen peas
  • 1 sheet puff pastry
  • Salt and pepper to taste

  1. Heat olive oil in a large pot over medium-high heat. Add the cubed beef and sear until browned on all sides. Remove the beef from the pot and set it aside.
  2. In the same pot, add the diced onion, chopped carrots, and celery. Sauté until the vegetables are softened, about 5 minutes. Add the minced garlic and cook for another minute.
  3. Return the beef to the pot. Stir in the vegetable broth, grape juice, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it braise for 2-3 hours, or until the beef is tender.
  4. Once the beef is tender, remove the bay leaf and stir in the frozen peas. Season with salt and pepper to taste. Let the filling cool slightly.
  5. Preheat your oven to 375°F (190°C). Transfer the beef filling to a pie dish. Roll out the puff pastry and place it over the filling, trimming any excess dough. Cut a few slits in the top to allow steam to escape.
  6. Bake the pot pie in the preheated oven for 25-30 minutes, or until the crust is golden brown and flaky.

Notes

For extra flavor, you can add a splash of apple cider vinegar to the filling. Make sure to let the filling cool slightly before assembling the pot pie to avoid a soggy crust. If you prefer a thicker filling, mix 1 tbsp of cornstarch with 1 tbsp of water and stir it into the filling before baking.
