Ingredients

Ingredients
  • 2 ripe avocados, diced
  • 2 cups fresh corn kernels (about 3 ears)
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 cup cherry tomatoes, halved
  • 1 can black beans, rinsed and drained
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Method

Instructions
  1. Prepare the vegetables. Dice the avocados, chop the red onion and cilantro, and halve the cherry tomatoes. If using fresh corn, carefully cut the kernels from the cobs.
  2. Make the dressing. In a small bowl, whisk together lime juice, olive oil, honey, cumin, salt, and pepper until well combined.
  3. Combine ingredients. In a large bowl, gently mix together avocados, corn, red onion, cilantro, jalapeño (if using), cherry tomatoes, and black beans.
  4. Add dressing. Pour the lime dressing over the salad and toss gently to coat all ingredients evenly.
  5. Serve immediately or chill. For best flavor, let the salad sit for 10-15 minutes before serving to allow the flavors to meld together.

Notes

Choose ripe avocados that yield slightly to gentle pressure. You can use frozen or canned corn as alternatives. Prepare dressing and chop vegetables ahead of time, but combine just before serving to prevent avocado browning.
